Paring Knives

Smooth or serrated, by definition a paring knife is used in hand and up off of the cutting board. Paring knives come in three basic shapes, although the names of these shapes may vary by distributer. Ranging from 3 to 4.5 inches in length, spear point parers can be identified by the shape of their blade the spine and tip of which meet in the immediate center of the knife. Spear points are the most common style of paring knife manufactured. The second style is known as a sheepsfoot parer although this shape is sometime referred to as kudamono. The straight edged spine of a sheepsfoot parer is distinct in that it rounds down to meet the dead flat edge of the knife. The last shape of paring knife available is known as a birds beak peeler or parer. This hook shaped blade is ideal for specialized tasks like fluting mushroom caps and is the perfect tool for executing the French seven sided cut known as tourné.

  • Mercer White 3" Paring Knife

In a professional production environment, a paring knife is an extension of the hand, not just a tool. The Mercer White 3-inch Paring Knife (M18170) is engineered specifically for the physical demands of high-volume prep stations. Unlike consumer-grade knives that prioritize aesthetics, this series focuses on tactile safety and fatigue reduction. During hands-on testing in high-moisture environments—peeling citrus, segmenting shallots, and trimming proteins—the dual-material handle provides a consistent mechanical lock. The combination of Santoprene for comfort and polypropylene for structural integrity ensures the knife remains secure even when hands are coated in fats or acids. The blade is forged from high-carbon, stain-resistant Japanese steel. This specific alloy was selected for its serviceability; it maintains a functional edge through crates of produce while remaining responsive to a ceramic rod for mid-service realignment. This is not a hollow-ground blade; instead, it features a clean, flat-tapered profile that provides predictable resistance and superior control for delicate off-board tasks. The seamless transition from the bolster to the blade eliminates food traps, making it a favorite for health-department-compliant kitchens. At 3 inches (76mm), the blade length is optimized for leverage and precision, reducing the wrist torque typically associated with longer, poorly balanced utility knives. Learn More
  • Mercer Millennia 3 1/2 in. Paring Knife

High-Efficiency Precision Prep for Professional Lines The Mercer Millennia 3.5" Paring Knife (M22003) is a foundational tool for any high-volume commercial kitchen. Unlike thinner, budget-grade blades, this knife uses X30Cr13 high-carbon stainless steel. In hands-on testing, the blade exhibits the necessary rigidity for piercing thick citrus rinds while maintaining enough flex for detail-oriented tasks like deveining shrimp or hulling strawberries. The 50/50 bevel provides a predictable, clean path through produce, essential for consistent garnish presentation. The defining feature of the Millennia series is the handle. Constructed from a hybrid of Santoprene and polypropylene, the grip feels tacky even when your hands are wet or coated in vegetable oils. The textured finger points allow for a choked-up 'pinch grip' near the bolster, providing maximum leverage for precise tip-work. At a Rockwell Hardness of 53-54, the steel is intentionally tempered to be tough rather than brittle; it resists chipping during heavy use and can be restored to a shaving-sharp edge with just a few passes on a ceramic honing rod. This knife does not require the delicate maintenance of high-HRC Japanese steel, making it the superior choice for culinary students and busy line cooks who prioritize uptime and safety. Learn More
