Carving & Slicing Knives
Carving and slicing knives are designed to be used when slicing meat. Both carving and slicing knives have long, thin, blades that typically range from 8 to 14 inches in length. This enables the user to create a long slice of meat or fish in a single stroke avoiding unnecessary back and forth sawing motions that tear at flesh and jeopardize the cleanliness of the cut. The thinness of the blade lends versatility to the carving knife which is often used by chefs when slicing wellington, cordon bleu, and other breaded dishes. Carving knives come to a sharp point unlike slicers also known as slicing knives. The tip of a slicing knife has been rounded for the protection of anyone on the other side of a carving station who may be overly eager to reach in for an extra helping of roast beef. Note that a Granton or Kullenschliff edge is most appropriate when applied to this knife shape as opposed to any other.

Shun Classic 12-inch Hollow Ground Brisket Slicer (DM0778)
For the dedicated pitmaster or culinary professional tasked with carving large-format proteins, the Shun Classic 12-inch Hollow Ground Brisket Knife (DM0778) offers an exceptional combination of length, precision, and specialized design. At 12 inches, the narrow blade is engineered specifically for single-pass slicing. This uninterrupted motion is crucial for preserving the natural juices and structural integrity of delicate cuts like smoked brisket, roasted turkey, or prime rib, eliminating the tearing and shredding often caused by a repetitive sawing motion. The blade features a series of hollow-ground indentations (often referred to as a Granton edge) that create microscopic air pockets during the cut, significantly reducing friction and preventing dense meats from adhering to the steel. Unlike the core Shun Classic line which utilizes a clad VG-MAX steel, this specialized slicer is deliberately forged from a single layer of high-performance Japanese AUS8A stainless steel. This specific alloy is chosen for its ideal balance of sharpness, stain resistance, and the necessary flexibility required in a long carving blade, preventing the brittleness that can sometimes occur in extremely hard steels of this length. The blade is hand-sharpened to a precise 16-degree angle per side, while the rounded tip adds safety and prevents accidental puncturing of the meat or foil wraps. Balancing the blade is a robust, full-tang construction secured by rivets within an ebony-finished PakkaWood® handle. The traditional Japanese D-shape provides a secure, comfortable grip that reduces fatigue during high-volume carving. To ensure safe storage and transport to events or catering jobs, the knife includes a fitted wooden saya (sheath). Learn More$259.95 -

Messermeister Meridian Elite 10-Inch Granton Edge Beef Slicer
Slice brisket, roasts, and large cuts cleanly in a single pass - no tearing, no sawing, no sticking. The Messermeister Meridian Elite 10" Granton Edge Slicer is a purpose-built knife for clean, precise slicing of large cooked proteins. Its long, narrow blade allows you to move through brisket, roast beef, turkey, and other cuts in one smooth stroke, preserving the structure of the meat instead of shredding it. This is not a general-purpose knife - it’s a dedicated slicer designed for presentation-quality results. The 10" blade length, combined with a thin profile and gradual taper, is engineered for long, continuous slicing strokes. This reduces the need for back-and-forth sawing and helps maintain clean edges and consistent thickness, especially when working with delicate or fibrous meats. The Granton (hollow edge) design features alternating scallops along the blade that create small air pockets during slicing. This reduces friction and helps slices release cleanly instead of sticking - a noticeable advantage when working with moist or fatty cuts like brisket or prime rib. Forged in Solingen, Germany from a single piece of 1.4116 (X50CrMoV15) stainless steel, the blade is hardened to 57-58 HRC for a balanced combination of edge retention, toughness, and corrosion resistance. The 15° Elite edge is hand-finished for sharpness, allowing precise, low-effort slicing while maintaining durability over time. Unlike traditional full-bolster German knives, the Meridian Elite features a no-bolster design. This allows for full-length sharpening from heel to tip and provides better control when using a pinch grip. The full-tang, triple-rivet handle is constructed from durable POM, offering a secure, moisture-resistant grip during extended use. Whether you’re carving a holiday roast or slicing smoked brisket, this knife is built to deliver clean, uniform slices with minimal effort.

Victorinox Fibrox Pro 12-inch Granton Edge Slicer
The Brisket Master’s Blade: Effortless Slicing Without the Friction When you are facing a 15-pound smoked brisket or a high-volume buffet line, the wrong blade won't just slow you down—it will tear your product. The Victorinox Fibrox Pro 12-inch Granton Edge Slicer is specifically engineered to solve the 'stick-and-tear' problem common with standard carving knives. At the heart of this tool is the Granton edge (kullenschliff), a series of hollowed-out grooves that create air pockets between the steel and the protein. This allows the blade to glide through moist meat without the vacuum effect that causes sticking. Whether you are a professional chef processing hundreds of turkey breasts for a holiday service or a home pitmaster aiming for that perfect 1/4-inch brisket slice, the 12-inch blade provides the necessary length for long, singular drawing strokes. This prevents the 'sawing' motion that ruins the texture of premium meats. The Fibrox handle is the industry benchmark for safety. Designed to stay secure even when hands are wet or covered in fats, it provides a tactile, slip-resistant grip that reduces hand fatigue during extended carving sessions. This is not just a knife; it is a high-performance extension of the hand, trusted by culinary schools and professional kitchens globally for its balance of edge retention and ease of maintenance.
