Suncraft Senzo Clad
Cladding is a method of sandwiching premium blade steel between layers of softer steel. This increases the toughness of the knife, while maintaining the excellent sharpness and edge retention that is a trademark of fine Japanese steel. This can be done with single layers of cladding material, or multiple layers to create a Damascus pattern. The Suncraft Senzo Clad knives are single layer (San Mai) clad knives with a core of AUS10 steel, tempered to 60° HRC and hand sharpened on a water wheel. Beautiful in their design and simplicity, these utilitarian knives perform exceptionally well at a modest price. These knives have an excellent fit and finish, are well shaped and well balances, and extremely inexpensive for the quality. Unlike many Japanese knives that are difficult to sharpen or re-edge these knives can be easily maintained with a honing steel. The Suncraft Senzo Clad paring knife is a beautifully crafted blade that takes a razor sharp edge, holds it well and is easy to maintain with a honing steel. Paring knives are used for precise detail work and for cuts made "in-hand" where both the knife and the product being cut are held off of the board.
