Shun Premier Knives

Shun Premier knives combine a VG-MAX cutting core with 34 layers of stainless Damascus cladding on each side (68 total) and a hand-hammered tsuchime finish. The hammered surface helps food release from the blade as you cut, and it gives every Premier knife its distinctive appearance. Each blade is sharpened to 16° per side for a fine, keen edge. The contoured walnut PakkaWood handle resists moisture and provides a secure grip, and the Shun emblem appears on the blade and the end cap. Like every Shun knife, Premier knives are handcrafted in Seki City, Japan, and come with free lifetime sharpening and a limited lifetime warranty. Premier shares its steel, cladding, and edge with the Shun Classic line; the two differ in finish and handle.

  • Shun Premier 9.5-inch Slicing Knife (TDM0704)

The Shun Premier 9.5-inch Slicing Knife is made for carving and slicing meat. Its long blade lets you cut each slice in a single stroke, producing long, even slices without the tearing and sawing that a shorter knife requires. The narrow profile and keen edge reduce friction, so the blade moves smoothly through roasts and poultry. It suits a wide variety of meats and also slices larger vegetables and melons. The hand-hammered tsuchime finish on the Shun Premier blade helps each slice release from the steel.
FeaturesLong blade: Nine and a half inches of edge crosses wide roasts in one stroke, so slices stay intact.Narrow profile: The slim blade reduces friction for a smooth, clean cut.VG-MAX cutting core: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge.Damascus cladding: Layered stainless steel supports and protects the core.Hammered tsuchime finish: The hand-hammered surface helps slices release from the blade.Contoured walnut PakkaWood handle: The handle offers comfort and control and resists moisture.Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening, so the edge can be professionally restored whenever it needs it.

  • Shun Premier 8-inch Chef's Knife (TDM0706)

The Shun Premier 8-inch Chef’s Knife is the knife you will reach for every day. It is light and agile, and its thinner blade makes it lighter and less tiring to use than comparable European-style chef’s knives, which matters over a long session of prep. The 8-inch length and keen edge handle slicing and dicing across fruits, vegetables, and proteins. The wide blade keeps your knuckles clear of the board and doubles as a scoop for moving cut food to the pan, and the curved belly lets you rock the blade to mince herbs and garlic finely. The hand-hammered tsuchime finish on the Shun Premier blade helps food release as you cut.
FeaturesThin, lightweight blade: Less weight in the hand reduces fatigue through extended prep.Wide blade: The blade height gives knuckle clearance on the board and carries cut food to the pan.Curved belly: The rounded edge supports a rocking motion for fine mincing.VG-MAX cutting core: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge.Damascus cladding: Layered stainless steel supports and protects the core.Hammered tsuchime finish: The hand-hammered surface helps food release from the blade while cutting.Contoured walnut PakkaWood handle: The handle offers comfort and control and resists moisture.Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening, so the edge can be professionally restored whenever it needs it.

  • Shun Premier 8-inch Kiritsuke (TDM0771)

The Shun Premier 8-inch Kiritsuke is for cooks who favor a straight edge and push cuts over a rocking motion. In Japan, the kiritsuke is known as the master chef’s knife, and it handles many of the same tasks as a chef’s knife. Its long, straight edge meets the board along its full length, which makes it especially effective for slicing, julienne, dice, and brunoise. The same edge cleans and portions boneless proteins, fish in particular, and slices cooked meats neatly. The hand-hammered tsuchime finish on the Shun Premier blade helps food release as you cut, so slices fall away instead of clinging to the steel.
FeaturesStraight, extended edge: The flat profile makes full contact with the board on every push cut, which produces clean, uniform vegetable cuts.Angled tip: The kiritsuke’s signature tip is precise enough for fine scoring and detail work.VG-MAX cutting core: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge through long prep sessions.Damascus cladding: Layered stainless steel supports and protects the core.Hammered tsuchime finish: The hand-hammered surface helps food release from the blade while cutting.Contoured walnut PakkaWood handle: The handle offers comfort and control and resists moisture.Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening, so the edge can be professionally restored whenever it needs it.

  • Shun Premier 9-inch Bread Knife (TDM0705)

The Shun Premier 9-inch Bread Knife is for cooks who slice bread of every texture, from crusty sourdough to tender brioche. Its wide, sharp, low-frequency serrations saw through bread without crushing it and leave fewer crumbs than a plain edge. Because the serrations are spaced farther apart than on a typical sawtooth bread knife, they cut rather than tear. The same smooth cut makes it well suited to cakes and pastries. The 9-inch length crosses a full loaf in long strokes, and the hand-hammered tsuchime finish on the Shun Premier blade helps slices release.
FeaturesLow-frequency serrations: Wide, sharp serrations cut cleanly through hard crusts without compressing the soft interior.Fewer crumbs: The serrations cut rather than tear, which keeps crumbing to a minimum.9-inch blade: The length crosses large loaves and layer cakes in long, even strokes.VG-MAX cutting core: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge.Damascus cladding: Layered stainless steel supports and protects the core.Hammered tsuchime finish: The hand-hammered surface helps slices release from the blade.Contoured walnut PakkaWood handle: The handle offers comfort and control and resists moisture.Free lifetime sharpening: Shun offers free lifetime sharpening, including the serrated edge.

  • Shun Premier 10-inch Chef's Knife (TDM0707)

The Shun Premier 10-inch Chef’s Knife is for cooks who want more blade on the board. Professional chefs often choose a longer chef’s knife because it moves more product with each stroke, and the extra length makes quick work of large produce, big batches, and wide roasts. The thin, light Shun Premier blade handles nearly as easily as a smaller knife while giving you that longer edge. The wide blade keeps your knuckles clear of the board and carries cut food to the pan, and the curved belly supports a rocking motion for mincing. The hand-hammered tsuchime finish helps food release as you cut.
FeaturesLong, light blade: The 10-inch edge covers more board per stroke, and the thin blade keeps the knife easy to maneuver.Wide blade: The blade height gives knuckle clearance and doubles as a scoop for moving food.Curved belly: The rounded edge supports a rocking motion for fine mincing.VG-MAX cutting core: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge.Damascus cladding: Layered stainless steel supports and protects the core.Hammered tsuchime finish: The hand-hammered surface helps food release from the blade while cutting.Contoured walnut PakkaWood handle: The handle offers comfort and control and resists moisture.Free lifetime sharpening: Shun offers free lifetime sharpening, so the edge can be professionally restored whenever it needs it.

  • Shun Premier 2-Piece Starter Set (TDMS0220)

The Shun Premier 2-Piece Starter Set brings together the two knives every kitchen needs, and it is the natural first step into the Shun Premier line. The 8-inch Chef’s Knife is the one knife you are sure to use every time you cook, for slicing, dicing, and chopping across fruits, vegetables, and proteins. The 4-inch Paring Knife handles the trimming and peeling that a chef’s knife is too large for. Between them, they cover most daily prep. The hand-hammered tsuchime finish on both blades helps food release as you cut, and the set arrives in a box suitable for storage or gift-giving.

  • Shun Premier 3-Piece Starter Set (TDMS0300)

The Shun Premier 3-Piece Starter Set includes the three key knives no kitchen should be without. It is built around the 8-inch Chef’s Knife, the one knife you are sure to use every time you cook. The 4-inch Paring Knife handles trimming and peeling, and the 6.5-inch Utility Knife covers the in-between tasks that are too large for a paring knife and too fine for a chef’s knife, such as slicing sandwiches, trimming vegetables, and sectioning citrus. Much of the work in a kitchen can be done with these three knives alone. The hand-hammered tsuchime finish on every blade helps food release as you cut, and the set arrives in a box suitable for storage or gift-giving.
FeaturesThree essential shapes: A chef’s knife, a utility knife, and a paring knife cover board work, mid-sized trimming, and in-hand detail.VG-MAX cutting cores: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge.Damascus cladding: Layered stainless steel supports and protects each core.Hammered tsuchime finish: The hand-hammered surface helps food release from each blade while cutting.Contoured walnut PakkaWood handles: The handles offer comfort and control and resist moisture.Gift box: The presentation box makes the set ready to give and doubles as storage.Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening for every knife in the set.

  • Shun Premier 4-Piece Steak Knife Set (TDMS0400)

The Shun Premier 4-Piece Steak Knife Set is for hosts who want the knife on the table to match the steak on the plate. A razor-sharp fine edge glides through the meat and cuts fewer of its fibers, so more of the juices stay inside the steak rather than running onto the plate. Because the edge is not serrated, it slices cleanly instead of tearing, and it is easier to re-sharpen when the time comes. The 5-inch blades are long enough for the largest steak, yet short enough for close control. The hand-hammered tsuchime finish gives each knife the signature Shun Premier look and helps food release. The set of four suits a small dinner party and arrives in a box suitable for gift-giving or storage.
FeaturesFine, non-serrated edge: A clean edge slices rather than tears, so each cut stays neat and the meat stays juicy.Edge retention at the table: Ceramic and glass plates are extremely hard on knife edges, and VG-MAX steel holds its edge for a very long time even with repeated contact against a plate.VG-MAX cutting cores: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge.Hammered tsuchime finish: The hand-hammered surface helps food release and gives the set its distinctive appearance.Contoured walnut PakkaWood handles: The handles offer comfort and control and resist moisture.Gift box: The presentation box makes the set ready to give and doubles as storage.Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening for every knife in the set.
