When manufacturing a knife with this dimpled or hollow edge an extra step is needed to cut the dimples into the blade so if you are ever wondering why HE knives can be more expensive its due to the entire extra step needed to build this product. • F. Dick 1905 AJAX Butcher Chef's Knife

A Power-Focused Hybrid: The F. Dick 1905 AJAX Butcher's Knife Combining the heft of a cleaver with the precision of a chef's knife, the AJAX is engineered for heavy-duty meat portioning and high-volume prep. When you first pick up the F. Dick 1905 AJAX, the immediate sensation is one of purposeful weight. Unlike a standard 8-inch chef's knife that might feel flighty during heavy tasks, the AJAX carries its mass in the broad 2.8mm thick spine and the wide, sweeping belly. This is a tool designed for the tactile reality of a butcher's block. Whether you are breaking down subprimals or portioning large slabs of beef brisket, the AJAX utilizes its cambered curve to rock effortlessly through dense muscle fibers, while the extra width provides a massive surface area for a secure pinch grip. The steel is X50CrMoV15, a high-carbon German alloy forged to a Rockwell hardness of 56. In practical use, this means the edge is tough enough to withstand accidental contact with bone without chipping, yet it remains easy to maintain with a standard honing steel. The 50/50 bevel is ground with industrial precision, ensuring the blade doesn't 'steer' or wedge in thick cuts of meat. Historically inspired by the 1905 design, the handle replaces traditional rivets with solid steel rings. This isn't just an aesthetic choice; it creates a gapless, hygienic bond with the high-quality plastic handle, providing a balanced counterweight to the massive 9-inch blade. Under heavy use, the handle stays secure in the palm, even when wet, allowing for fatigue-free work during long shifts in a professional kitchen or a demanding home BBQ session. This knife doesn't just cut; it dominates the board with German engineering that prioritizes physical leverage over marketing gimmicks. Learn More
  • F. Dick 1905 Series 7 in Carving / Boning Knife

The Friedrich Dick 1905 Boning Knife is an excellent multi-purpose blade that is fully forged, with a reduced bolster for comfort. This knife uses an excellent blend of high carbon steel with a mix of chromium and molybdenum for reduced wear and increased edge retention. I've never seen this shape before in German steel, but it is one of my favorites. Excellent for removing silver skin from tenderloins or veal legs. Great for trimming fat from the backside of ribs. Can be used as any other boning knife, but I also find this shape to be much easier to re-sharpen. Learn More
  • F. Dick 1905 Series 8.5 in. Bread Knife

The Friedrich Dick 1905 8.5-inch Bread Knife is a durable and versatile option for a serrated knife. This fully forged bread knife features the standard style of serration with razor sharp tines and a wide beveled edge which is great for the longevity of the serrations. The X50CrMoV15 steel is the ideal steel type for a bread knife as you need the serrations to stay straight and razor sharp if a bread knife is too hard chipping may occur and too soft it won’t hold an edge for long. F. Dick ensures their 1905 series knives are hygienically sealed, optimally balanced and ideally tapered. This is an excellent bread knife at a very competitive price. Learn More

Dick ensures their blades are hygienically sealed so this knife can be used in even the cleanest environments. Learn More
