Naniwa 400 Grit Professional (Chosera) Stone
The Naniwa Professional 400 Grit Ceramic Stone is the coarsest stone in the Professional series. This stone is designed to cut very quickly and to remove a lot of steel. Although ceramic stones are by nature less aggressive than traditional or oil stones this stone does move a sustantial amount of steel. We recommend this stone for re-profiling, reshaping and thinning blades, removing chips, repairing tips and other heavy work that requires quick cutting. The 400 grit can also be used as an initial stone for confident sharpeners who want to speed up their work, but we don't recommend using this as your go-to primary stone. This will leave a fairly rough edge that needs to be followed by a smoother stone. We'd recommend moving from this stone to a 1000 grit before you finish on a high-grit polishing stone. Naniwa Lobster 3000 Grit Waterstone
The Naniwa (Lobster Brand) 3000 Grit sharpening stone (210x65x20mm). At 20mm height this stone is slightly shorter than the other (Lobster 220 & 1000) naniwa waterstones. This 3000 Grit stone has a very smooth texture and is intended for polishing a knife for cutting proteins. This is a waterstone so it will need to soak for a minute or two before use. Made in Japan.

The Naniwa 3000 grit Ceramic Super Stone makes for a great final stone, a perfect step-up from the 1,000 grit stone. It is fine enough to be used prior to using a finer grit such as an 8,000 grit water stone.

Naniwa Large 24 Grit Flattening Stone

Produces extremely flat results on all water stones, ceramic or traditional. Flattener and stone should be wet before use. This large flattening stone comes with rubber feet and is designed to be laid flat in a sink bottom while you hold the stone and run it across the flattener. Extra coarse for fast cutting. We use these because of the high volume of hand sharpening. This cuts quickly, but can leave fine grooves in the higher grit stones, which should be smoothed with your dressing stone. Naniwa Lobster 220 Grit Waterstone
The Naniwa (Lobster Brand) 220 Grit waterstone is an aggressive stone with a fair amount of bite. This stone is best used on knives that are very dull, damaged or have issues like a missing tip.
