Pride Abrasive Professional 3000 Grit Waterstone - 5 Micron Synthetic Abrasive
The Precision Bridge: Transform Your Edge from Functional to Surgical True culinary mastery requires an edge that does more than just cut—it must glide. The Pride Abrasive 3000 Grit Waterstone (SKU: WW3000) is specifically designed as the 'sweet spot' in any professional sharpening progression. While a 1000-grit stone sets the geometry, and a 6000-grit stone provides the mirror polish, the 3000-grit stone is where the real magic of bite and smoothness is balanced. Manufactured with pride in the USA, this grey synthetic stone utilizes a proprietary bonding process that ensures the 5-micron abrasive particles remain consistent throughout the life of the stone. Unlike cheaper imports that suffer from grit contamination or uneven wear, Pride Abrasives offers a 'splash and go' experience that saves time in high-volume kitchens. For knives that are starting to lose their 'toothy' aggression but haven't yet become dull, this stone serves as the ultimate touch-up tool. It removes just enough material to realign the apex while preparing the surface for the final refinement stages. Whether you are a professional chef maintaining a laser-thin Japanese gyuto or a home enthusiast perfecting a German chef's knife, this stone provides the tactile feedback necessary to achieve a world-class edge. RH Preyda 3000 Grit Natural Waterstone
The Pinnacle of Natural Sharpening Performance In a world of synthetic abrasives, the RH Preyda 3000 Grit Natural Arkansas Waterstone stands as a testament to the superior power of nature. Mined from high-quality Novaculite deposits in the United States, this stone offers a unique crystalline structure that synthetic alternatives simply cannot replicate. For professional chefs and home enthusiasts alike, the search for the perfect edge usually involves a complex progression of stones. However, the unique density of this 3000-grit Novaculite allows it to perform the work of multiple stones, bridging the gap between medium refining and fine polishing. Why Chef David Selects This Stone Above All Others When precision is non-negotiable, the tool matters. If we had to choose only one stone to sharpen every knife in our store it would be the RH Preyda 3000 grit. This is Chef Davids top choice for single stone sharpening. Its secret lies in the 'abrasive-hardness' balance. Unlike synthetic stones that wear down quickly and require frequent flattening, the natural Novaculite is incredibly durable, providing a quicker dull-to-sharp process while maintaining its surface integrity for years of service. Whether you are working with high-carbon Japanese steel or rugged German stainless, this stone adapts to the steel's needs. It provides enough 'bite' to remove micro-dullness while simultaneously burnishing the edge to a mirror-like finish that glides through proteins and vegetables with zero resistance. Accompanied by a custom-fit silicone non-slip base, it ensures your sharpening process is as safe as it is effective. Learn More$84.00 -
Naniwa 3000 Grit Ceramic Super Stone
Size: (210x70x20 mm) (8.25x2.75x.80 in.)
The Naniwa 3000 grit Ceramic Super Stone makes for a great final stone, a perfect step-up from the 1,000 grit stone. It is fine enough to be used prior to using a finer grit such as an 8,000 grit water stone.
The higher abrasive levels contribute to the ease of sharpening. No need to soak the stones in water, just give it a splash and go. Do not soak the stone. Learn More$72.95 -
Naniwa 3000 Grit Diamond Sharpening Stone

Naniwa 400 Grit Professional (Chosera) Stone
The Naniwa Professional 400 Grit Ceramic Stone is the coarsest stone in the Professional series. This stone is designed to cut very quickly and to remove a lot of steel. Although ceramic stones are by nature less aggressive than traditional or oil stones this stone does move a sustantial amount of steel. We recommend this stone for re-profiling, reshaping and thinning blades, removing chips, repairing tips and other heavy work that requires quick cutting. The 400 grit can also be used as an initial stone for confident sharpeners who want to speed up their work, but we don't recommend using this as your go-to primary stone. This will leave a fairly rough edge that needs to be followed by a smoother stone. We'd recommend moving from this stone to a 1000 grit before you finish on a high-grit polishing stone. Naniwa 400 Grit Diamond Stone
These stones feature a diamond abrasive layer embedded in resin, securely mounted on a durable metal base. Unlike many diamond plates that use a single layer of diamonds, these stones boast a 1mm-thick diamond-infused resin layer. This design allows the stone to gradually shed worn or clogged material, continuously exposing a fresh cutting surface. The controlled shedding process delivers a water stone-like sharpening experience with the durability and cutting power of diamond abrasives, making it ideal for even the toughest sharpening tasks. RH Preyda 400 Grit Arkansas Waterstone
Restore Your Edge with the Pure Power of Natural Novaculite When your professional blades lose their bite, synthetic stones often wear down as fast as the steel they are meant to sharpen. The RH Preyda 400 Grit Arkansas Stone is different. Sourced from the Ouachita Mountains, this stone is composed of natural Novaculite—a microcrystalline quartz renowned for its unique combination of extreme hardness and aggressive abrasiveness. This isn't just a whetstone; it is a precision instrument designed for those who demand a consistent, professional-grade edge. The Natural Advantage Unlike mass-produced synthetic stones that 'dish' and become concave with heavy use, the natural density of RH Preyda’s Novaculite ensures a flatter sharpening surface for a significantly longer lifespan. The 400-grit surface is the 'workhorse' of any sharpening kit, specifically engineered to reset the bevel and remove nicks from neglected or heavily used blades. By utilizing a water-based system, this stone provides a cleaner sharpening experience without the mess of traditional honing oils. Professional Stability & Scope At 8" x 3" x 1", this bench stone offers a massive surface area capable of handling everything from delicate paring knives to heavy-duty 10-inch chef’s knives and butcher's scimitars. To ensure safety and precision, each stone includes a custom-fitted silicone non-slip base that anchors the stone to your workstation, allowing you to focus entirely on maintaining your sharpening angle. Whether you are a professional chef or a dedicated home cook, this American-made stone represents the gold standard in edge maintenance. Learn More$65.00 -
Minonokuni 4000 Grit Waterstone
Minonokuni's 4000 grit waterstone is a traditional Japanese finishing stone, custom specified by Minonokuni's craftsmen for Knife Merchant and tested extensively in regular use here in our own kitchen. This stone gives excellent feedback, develops a slurry easily, and resists dishing, holding its flat surface well over repeated use. It leaves a mirror finish with a level of polish that is noticeably better than other stones of comparable grit. As a traditional waterstone, it should be soaked before use, typically until the bubbles stop rising. The surface should be kept wet throughout sharpening. Made in Japan and sized at 210mm by 70mm by 20mm (8.25 by 2.75 by 0.8 inches), it pairs naturally with a coarser stone for edge repair. We like to pair this stone with the Minonokuni 1000 grit waterstone. Together these two stones are enough for a complete, simple sharpening routine, from re-establishing a dull edge to creating a refined, mirror finish. Chef Feedback “This is an excellent finishing stone that gives good feedback, creates a nice slurry, and is resistant to dishing. It imparts a nice mirror finish, with a much better finish than you would expect for this grit size. If you want just two stones for your knife maintenance, the Minonokuni 1000 and 4000 are a great combination.” Learn More$69.95 -
Norton 4000/8000 Grit Combination Waterstone
The Norton 4000/8000 Grit Combination Waterstone creates an abrasive slurry during use, for effective sharpening with less pressure than oil stones. The 4000 grit is for maintaining and refining your blade's edge, and the 8000 grit is for polishing. The 4000 grit side requires some soaking and the 8000 can be used as a "splash and go". We recommend using the blue storage case for soaking the 4000 grit as this will allow the 8000 side to stay out of the water. The blue plastic box features rubber feet, and can be used as a holder during use. Learn More$150.00 -
