Naniwa Sharpening Stone Holder
The Naniwa Stone Holder secures your stone while sharpening or flattening. It has good traction with the rubber mounts and sufficient weight to keep from moving around. Holds stones from 5.5 to 9 inches in length.
This is good quality stainless steel that won't rust out on you. We tested one leaving it in the water overnight and pulling it out in the daytime as we used it. Other models rusted on us within days. The Naniwa never rusted after two months, and the screw downs still move smoothly. Now, these shouldn't be left in the water and we're not suggesting that. But if it gets accidentally left in the soak tank, it's not going to be a problem. Learn More$39.95 -
Masahiro 1500 Grit Waterstone
Achieve a Sharp Edge with the Masahiro 1500 Grit Waterstone The 1500 grit surface is perfectly suited for routine maintenance, allowing you to quickly touch up and restore the keenness of your knives without excessive metal removal. This Masahiro waterstone comes permanently attached to a sturdy, non-slip stand. The stone thickness of one inch is larger than most stones and creates excellent longevity. For most kitchen uses, 1500 grit is all that is needed for a slightly toothy edge that excels on products like tomatoes and waxed vegetables. If a fine polish is desired for use on proteins, we recommend finishing on the Masahiro 3000 grit stone. Soak the stone in water before use to ensure optimal performance. For best results and to maintain a flat sharpening surface, it is also advisable to use a flattening stone as needed. Learn More$64.25 -

Norton IM313 Coarse Crystolon Replacement Stone JM3
When your commercial kitchen or butcher shop relies on the Norton IM313 Multi-Stone system, the Coarse Crystolon stone (JM3) is your first line of defense against dull, damaged, or rolled edges. Manufactured by Norton, the world leader in abrasives, this replacement stone is engineered specifically for the 11.5-inch multi-stone rotating case. Crafted from premium silicon carbide, the Crystolon material is prized by professional sharpeners for its aggressive, fast-cutting nature. Unlike aluminum oxide stones which prioritize finish, this coarse-grit abrasive excels at rapid metal removal. This makes it the indispensable tool for 'thinning' a blade that has grown too thick at the edge or grinding out significant nicks after a heavy shift. Because it is an oilstone, it remains porous and resists loading when used with genuine Norton sharpening oil, ensuring that every stroke remains as effective as the first. Whether you are maintaining a fleet of house knives or restoring a chef's favorite carbon steel scimitar, this stone provides the foundational geometry required before moving to medium and fine finishing stages. Naniwa Super Stone 10,000 Grit Ceramic Finishing Waterstone (S2-490)
Achieve the Legendary 'Scary Sharp' Mirror Edge Sharpening is a journey that begins with repair and ends with refinement. For those who demand more than just a functional edge, the Naniwa 10,000 Grit Ceramic Super Stone represents the pinnacle of Japanese abrasive technology. Unlike lower grits that remove steel to create a new edge, this ultra-fine 10,000 grit stone is a specialized tool designed to polish and temper. At this microscopic level, you are no longer 'grinding'; you are aligning the steel's molecular structure and removing the invisible burrs that prevent a knife from gliding through delicate proteins. The result is a 'mirror edge'—an aesthetic masterpiece that provides a frictionless cutting experience. Crafted using Naniwa’s proprietary resin-bonding process, this stone offers a unique tactile feedback often described as 'creamy' by professional sharpeners. This ensures you can feel the angle of your blade across the surface, providing more control than harder, glass-backed alternatives. Whether you are maintaining a high-carbon Honyaki or a modern VG-10 blade, this stone delivers the final, definitive touch of sharpness. Learn More$93.95 -
Naniwa 10,000 Grit Professional (Chosera) Stone
Master the Art of the Invisible Edge: The Naniwa 10,000 Grit Professional Series When a knife reaches the 10,000 grit level, it transcends mere sharpness and enters the realm of surgical precision. The Naniwa 10,000 Grit Professional Stone—formerly celebrated worldwide as the 'Chosera'—is engineered for the final, most critical stage of the sharpening process. This is the stone that transforms a sharp blade into a high-performance tool capable of effortless, friction-free slicing. What sets the Naniwa Professional Series apart is its sophisticated Magnesia-based bonding agent. Unlike traditional resin-bonded stones, Magnesia allows for a higher density of abrasive particles. This technical advantage results in two distinct benefits for the professional: a stone that stays flat for significantly longer and a vastly increased sharpening speed. Because the bond is so efficient, this stone does not require soaking. Simply splash the surface with water, and you are ready to refine your edge in seconds. This stone is much cleaner than your typical waterstone that requires soaking before use, so it's a great choice for use on-the-go or in spaces that need to remain tidy. Designed specifically for high-carbon steels and traditional single-beveled Japanese knives like the Yanagiba or Usuba, the 10,000 grit surface produces a flawless mirror polish. It doesn't just sharpen; it refines the geometry of the edge to eliminate microscopic jaggedness. For the professional chef or dedicated enthusiast, this translates to cleaner cuts, better food presentation, and a blade that stays sharper for an extended period. The feedback from the stone is tactile and communicative, allowing you to feel the exact moment your bevel reaches perfection. Learn More$250.25
