The 1,000 grit cuts fast and should be used on dull knifes to establish an edge (form a burr).
The 3,000 Grit is ideal for edge maintenance, the edge will be refined and suited for vegetables coming off of this grit but not polished, (for meat and fish).
The 6,000 grit water stone can be used to further refine and maintain already sharp knives, it can be used to smooth/ remove the wired edge and it will polish your knives for a longer lasting edge.
