  • Master Grade 11-inch Black Ceramic Honing Rod

The Professional’s Secret to a Lasting Edge Traditional steel rods often fail when faced with modern, high-HRC Japanese blades. The Master Grade 11-inch Black Ceramic Rod solves this by utilizing a material rated at 8 on the Mohs hardness scale—significantly harder than standard kitchen cutlery. This isn't just a realignment tool; it’s a precision instrument that removes microscopic amounts of metal to refresh a dulling edge without the aggression of a whetstone. Whether you are a professional line cook prepping forty pounds of mirepoix or a home enthusiast maintaining a prized collection, this rod offers two distinct finishes in one tool. Use the striated sides for an aggressive hone when the edge feels sluggish, then rotate 90 degrees to the smooth sides for a polished, razor-sharp finish. Unlike traditional ceramic rods that are notoriously brittle, the ST-2800 features a reinforced metal core and an impact-resistant rubber tip. This design provides a critical safety net against the common 'death sentence' of a dropped ceramic tool. Its square bolster is a subtle but vital ergonomic choice, ensuring that when you set the rod down on a stainless steel prep table or a granite countertop, it stays exactly where you put it. This rod doesn't just maintain your knives; it protects your workflow. Learn More

  • Granton 12-Inch Multi-Cut Combination Steel (Model 62102)

Why Choose a 12-Inch Steel? The Professional Standard A professional rule of thumb states that a sharpening steel should be at least as long, and ideally two inches longer, than the blade of your longest knife. This makes the 12-inch Granton steel the essential choice for anyone using longer butcher knives, scimitars (typically 10-12 inches), and slicing knives. This extended length is crucial for safety and effectiveness. It allows you to draw the entire blade from heel to tip in one smooth, continuous motion, guaranteeing an evenly honed edge while keeping your guiding hand safely away from the blade. Two Steels in One: The Multi-Cut Advantage The Model 62102 rod features two opposing sides with a fine cut and two opposing sides with a super-fine (polishing) cut, delivering a complete two-stage maintenance system. 1) Fine-Cut Surfaces: These are the workhorse sides, designed for daily honing to quickly realign a blade's edge that has started to dull or roll. 2) Super-Fine (Polishing) Surfaces: After honing, a few strokes on the super-fine surfaces provide the ultimate refinement, polishing the edge to an exceptionally keen, smooth finish. These sides polish the edge, removing the most microscopic imperfections and creating an exceptionally keen, smooth finish that glides through food with minimal resistance. Learn More
  • Shun Combination 9 in. Honing Steel

It gently realigns the edge of your blade, bringing the “sharp” back. It offers two honing surfaces: a smooth one for weekly honing and a micro-ribbed one for monthly honing—depending on your usage, of course.
