Global Sharpening Guides are designed to clip to the back of the knives and demonstrate the proper angle for sharpening Japanese knives (between 10 and 15 degrees). The larger clip is for wider knives like a chef or santoku. The narrow clip is for thin blades, such as slicer and utility knives. They have a plastic lining to prevent scratching the knife finish. It's a very quick and inexpensive way to insure that you are setting your edges correctly.
