Before First Use
Remove the labels and packaging, using a little acetone to lift any adhesive. Wash in warm water with a little dish soap, rinse and dry thoroughly.
Tips for Best Results
- Cook over medium heat. Demeyere notes that 20 to 30 percent below the burner’s maximum is enough for frying.
- To keep food from sticking, preheat the pan, add the fat, and lower the heat a level or two once butter stops foaming or oil begins to shimmer. Wait about 10 seconds, then add the food and let it release before turning it.
- On induction, use a zone close to the size of the base and save the booster setting for boiling water. On gas, keep the flame under the base.
- Add salt to water only after it boils, since undissolved salt can leave small pits in stainless steel.
- The handles stay cool on the stovetop, but they get hot in the oven. Use a pot holder or oven mitt.
Care
Let the pan cool before washing. Use warm water, dish soap and a soft sponge or brush; never steel wool, abrasive powders or bleach. Soak burnt-on food in warm soapy water, overnight if needed. White spots or a rainbow tint come from minerals in the water and wipe away with a splash of vinegar. Demeyere lists Atlantis as dishwasher safe but recommends washing by hand for regular use. Do not plunge a hot pan into cold water.
