The edge grain construction is specifically chosen for its balance of durability and knife-edge protection. The vertical orientation of the wood fibers allows high-HRC (Rockwell Hardness) Japanese and German steel to bite slightly into the surface rather than reflecting off it, which preserves the microscopic alignment of your knife's edge for longer periods between hones.
