Calibration

Fill a cup with a slurry of three parts crushed ice to one part water, let it sit for a few minutes, then submerge the stem at least 2 inches without touching the bottom of the container. Hold the CAL button for 4 seconds and release when CAL flashes; the display should read 32.0°F (0°C). The unit only accepts calibration when the water reads between 30–34°F, which keeps it from being calibrated by accident.

Care

Hand wash the stem with warm, soapy water and dry it before storing; don't put the housing in liquid, a hot oven, or a microwave. Wear a heat-resistant glove when handling the stem during or right after cooking — it reads the same heat it's measuring.
