Dexter Traditional Series Wood Handle Turner - 4" x 2.5" Stainless Steel
The Gold Standard in Griddle Performance When the heat of a commercial kitchen is at its peak, the tools in your hand define your efficiency. The Dexter-Russell 4" x 2.5" Turner (SKU 16090) is more than just a spatula; it is a precision instrument designed for cooks who demand tactile feedback and rugged reliability. Whether you are working a high-volume flat-top or a backyard cast-iron skillet, this turner provides the necessary leverage to handle heavy proteins while maintaining the finesse required for delicate eggs. Engineered for High-Performance Environments Crafted by America's oldest cutlery manufacturer, this turner features a proprietary stainless steel blade that has been precision-ground to offer 'balanced flexibility.' This means it is rigid enough to scrape a griddle clean or press a smash burger, yet responsive enough to slide under a fragile tilapia fillet without tearing the flesh. The smooth, beveled edge is a hallmark of Dexter-Russell engineering, allowing for a seamless transition from the cooking surface to the blade. Ergonomics Meets Heritage Aesthetics While modern plastics have their place, nothing replaces the secure, natural feel of a hardwood handle. The Traditional™ series handle provides a comfortable, slip-resistant grip that actually improves as it develops a patina through years of use. Reinforced with triple-riveted construction, the blade is anchored deep into the handle, ensuring that the tool will never wiggle or fail under the pressure of professional daily use. This is a tool built for a lifetime, not just a season. Learn More$22.70 -
Dexter 2 1/2 x 2 1/4 in. Turner
The Professional’s Secret for Precision Griddle Work When every square inch of your griddle or sheet pan matters, the Dexter-Russell 2 1/2" x 2 1/4" Turner (S240) provides the surgical precision required by professional chefs, bakers, and line cooks. This isn't just another spatula; it is a specialized tool designed for tasks that demand finesse, from flipping silver-dollar pancakes and delicate eggs to lifting perfectly portioned sliders in a crowded commercial kitchen. Crafted by Dexter-Russell—a brand synonymous with American culinary heritage since 1818—this turner is part of the Traditional™ series. It bridges the gap between heavy-duty performance and nimble maneuverability. The compact blade allows you to slip under delicate items without disturbing adjacent food, while the stiff high-carbon steel construction ensures you can scrape a griddle or lift a heavy burger with zero flex. Whether you are operating a high-volume deli, a boutique bakery, or a specialized burger joint, the S240 is the 'Goldilocks' of turners: small enough for tight spaces, yet robust enough for all-day service. The professional-grade construction is built to withstand the high-heat environment of the grill, making it a permanent fixture in your tool kit. Learn More$16.99 -

Dexter 8 3/4 in. Narrow Felt-Lined Edge Guard
Mechanical Blade Security for Professional Slicers When sliding a precision-ground slicer into a standard plastic guard, the friction alone can create micro-scratches on the blade face. This Dexter-Russell 8.75-inch narrow edge guard solves this via a dual-material architecture. The exterior is a rigid, impact-resistant plastic that prevents the blade from piercing the sheath during transport in a crowded knife roll. Internally, the soft felt lining creates a low-friction environment. In hands-on testing, the blade seats with a firm, tactile 'thud' rather than a plastic click, indicating a snug fit that prevents the knife from shifting. The 1.25-inch width is a critical specification. Unlike universal guards that allow narrow slicers to rattle or slide out, this narrow-profile geometry maintains constant contact with the spine and edge. This prevents the 'edge-walk' common in wider guards, which often results in the tip of the knife impacting the end of the guard. For chefs moving between high-volume stations, this guard ensures that a 20-degree or 15-degree factory edge remains shaving-sharp without the need for touch-up honing upon arrival. The gray exterior is textured for a secure grip even when handling with damp hands in a fast-paced kitchen environment. Learn More -

Naniwa 400 Grit Professional (Chosera) Stone
The Naniwa Professional 400 Grit Ceramic Stone is the coarsest stone in the Professional series. This stone is designed to cut very quickly and to remove a lot of steel. Although ceramic stones are by nature less aggressive than traditional or oil stones this stone does move a sustantial amount of steel. We recommend this stone for re-profiling, reshaping and thinning blades, removing chips, repairing tips and other heavy work that requires quick cutting. The 400 grit can also be used as an initial stone for confident sharpeners who want to speed up their work, but we don't recommend using this as your go-to primary stone. This will leave a fairly rough edge that needs to be followed by a smoother stone. We'd recommend moving from this stone to a 1000 grit before you finish on a high-grit polishing stone. Naniwa 1000 Grit Professional (Chosera) Stone
The Apex of Sharpening: Naniwa 1000 Professional Stone For the craftsman who understands that the edge is everything, there is the Naniwa 1000 Professional Stone. This is not merely a tool for sharpening; it is the heart of a precision sharpening system, revered globally by master chefs, woodworkers, and knife enthusiasts for delivering an unparalleled sharpening experience. At the 1000-grit level, it is the quintessential workhorse—aggressively re-establishing a flawless primary bevel on a dull blade while leaving a refined, toothy edge ready for the most demanding cuts. The soul of this stone lies in its advanced magnesia-bonding process. This proprietary method creates a supremely dense yet friable surface, packed with a higher concentration of premium abrasive. The result is a sharpening sensation that must be felt to be believed: a swift, almost effortless cutting action with a smooth, velvety feedback that communicates the state of the edge directly to your hands. As you work, it generates a rich, uniform slurry that aids in polishing the steel, creating the beautiful, hazy kasumi finish prized on high-end Japanese cutlery. This is more than a purchase; it's an investment in the art of sharpening. Choose the Naniwa Professional when you seek not just a sharp knife, but mastery over the edge itself. Learn More$83.95
