Ateco Round Ring Mold, 2 x 1.75-inch

Small ring molds are for portions meant to sit beside something else on the plate. At 2 inches across, this ring shapes a neat cylinder of tartare, rice or vegetable salad as one component of a composed dish.

In pastry, it sets individual mousses and mini cheesecakes for a dessert sampler. The open top and bottom let the ring lift away cleanly once the contents hold their shape.

    Using a Ring or Mold

    Set the mold on the plate or a lined tray, fill it in layers and press each layer down lightly. For chilled desserts, let the mold set in the refrigerator, then warm the outside briefly with your hands or a torch and lift it straight up.

    Wash in hot soapy water and dry completely before storing.
