Messermeister Esther Choi 7-inch Push Button Take-Apart Shears

Cut, crack and snip like a pro, says Messermeister of these 7-inch precision shears created with chef Esther Choi. A push button releases the patented bearing pivot, so the blades separate in a moment for cleaning and lock back together just as quickly.

The blades are Daido 1K6 high-carbon stainless steel with a black titanium coating and a micro-serrated edge that holds food in place. The coating resists rust well, and the micro-serrated edge stays functional for utility work longer than a straight-edged shear; once the factory edge finally dulls, it needs a sharpener designed for serrations. Several tools are built in, including a bone notch for poultry, a claw cracker for shellfish and a herb stripper. Double-molded soft grips keep the shears steady when you work through a chicken back.
