Utility Knives
Named for their utilitarian nature, utility knives can be used for a wide variety of tasks. Their thin blades minimize resistance and are a preferred tool of many cooks when slicing and dicing stickier foods like potatoes. Typically ranging from 4 to 7 inches in length, utility knives are the perfect tool to use when your chef knife is too big to maneuver precisely, but your paring knife is just too darn small.

Masahiro Virgin Carbon 6 in. (150mm) Utility Knife
At 6 inches this Masahiro Virgin Carbon Utility knife is perfectly sized for a variety of jobs. From peeling, mincing and slicing fruits and vegetables, to trimming fat and silver skin, or processing poultry, this is an extremely functional blade. The petty knife can be thought of as a companion to the chef's knife - this is the blade you should reach for when you're looking for greater precision and control. This particular model is made with pure carbon steel which takes an extremely sharp edge. I particularly enjoy the benefits of a carbon steel blade when working with proteins that require the smoothest possible edge. When cutting corrosive fruits like citrus and tomatoes carbon will wear more quickly than stainless. If your diet is vegetable heavy you may prefer the stainless steel version of this knife. Masahiro Virgin Carbon 4.75-inch (120mm) Utility Knife
The Purist’s Choice for Surgical Kitchen Precision The Masahiro Virgin Carbon 120mm Utility Knife (MH13002) is not just a tool; it is a specialized instrument for chefs who prioritize edge geometry and metallurgy above all else. At the heart of this knife is Masahiro's Original Hagane (ZCD-U), a 'virgin' carbon steel containing 1.05% carbon. Unlike mass-market stainless steels, this high-purity alloy is treated to a Rockwell hardness of 61, allowing it to take and hold an edge that feels significantly 'toothier' and more aggressive than its corrosion-resistant counterparts. This 120mm (4.75 inch) petty is the surgeon’s scalpel of the professional kitchen. Its profile features a more prominent heel than standard Western paring knives, making it uniquely capable of transitioning from delicate hand-peeling and decorative fruit work to light board work like dicing shallots or mincing garlic. The asymmetrical compound grind is specifically engineered for right-handed efficiency, reducing food stiction and providing a smoother passage through dense proteins or fibrous vegetables. Over time, the carbon steel will develop a unique patina—a badge of honor that tells the story of every service it has powered through. For the professional line cook or the dedicated home enthusiast, the MH13002 offers a level of tactile feedback and sharpening ease that stainless steel simply cannot replicate. Learn More$63.00 -
Masahiro MV Left Handed Utility Knife
Masahiro MV 6 in. (150mm) Left Handed Utility has decent knuckle clearance for a utility knife. Very sharp and edged on one side of the blade (80/20). Very useful for close, precise hand work like shallots, garlic, trimming fat etc.. Some Chefs with smaller hands like to use this as their main knife. Because the blade is narrow and thin, it glides right through food with a minimal amount of drag. If you're a fan of Jacques Pepin (and if not, you should be) you may notice that he uses this knife style for much of his basic slicing and dicing. Since Masahiro’s founding, they have been dedicated to making knives in Seki City, the sword capital of Japan. The materials used in their knives are sourced in Japan. In addition, no part of the processing is outsourced overseas, and their parts are made in Japan. At Masahiro craftsmen carry out almost all processes from material selection to hardening and finishing sharpening at their main factory. Each and every knife is packed with the know-how of our veteran craftsmen. The sharpness of our knives is guaranteed by the handiwork of craftsmen who have been making knives for many years. They carefully assess the characteristics of each material and apply the optimal processing and sharpening to each knife. The MV line by Masahiro is the model that sets the standard for stainless steel professional knives. The handle is made of laminated reinforced wood with antibacterial agents. The blade is made of high-carbon stainless steel "MBS-26," which is resistant to rust and has excellent sharpness durability. The weight of the knife feels good in your hand, and it is a well-balanced design that does not tire you out even after long hours of work. A single-edged blade is a knife with a back bevel on one side. The main benefit of a single sided blade is the taper of the blade comes to a finer edge; an added benefit of the single-sided blade is the ease of sharpening on stones, the majority of the sharpening process is done just on the face(front) side of the knife only a small amount of sharpening work is needed on the backside of the knife to straighten and align the edge. Masahiro Virgin Carbon 6-inch (150mm) Left Handed Utility Knife
Surgical Precision for the Left-Handed Professional Prep Station When a standard paring knife is too small and a chef’s knife is too cumbersome, the Masahiro Virgin Carbon 150mm Utility Knife (Petty) fills the gap with industrial-grade efficiency. This is not a general-purpose tool; it is a specialized instrument designed for left-handed professionals who demand surgical control over shallots, herbs, and small citrus. Forged from Masahiro's legendary Virgin Carbon steel, this blade reaches a staggering 61 on the Rockwell C scale. This hardness allows for a significantly thinner, more acute edge that holds its bite through hundreds of pounds of prep. Unlike mass-produced stainless steel, this virgin carbon alloy responds instantly to a ceramic hone, allowing you to maintain a screaming-sharp edge during the heat of a double shift. The true value of the MH13104 lies in its dedicated left-handed geometry. While many brands offer 'neutral' grinds, Masahiro utilizes a specific asymmetrical bevel that prevents the blade from pulling during the cut, ensuring perfectly vertical slices every time. The Stamina Wood handle is pressure-treated with resin, offering the warm feel of natural wood with the sanitary durability of a polymer—essential for passing strict health inspections in high-volume environments. Because this is a high-performance carbon steel tool, it will develop a unique patina over time, signaling a chef’s commitment to their craft and tool maintenance. Learn More$93.75 -

Mercer Genesis Series 5 in. Utility Knife
Precision Control for High-Volume Prep and Detail Work The Mercer Genesis 5-Inch Utility Knife (M20405) serves as the critical bridge between your heavy-duty chef’s knife and a delicate paring blade. Forged from a single piece of high-carbon X50CrMoV15 German steel, this tool is engineered to maintain a razor-sharp edge through hours of repetitive slicing, dicing, and trimming. During hands-on testing, the weight distribution is immediately noticeable; the full bolster provides a distinct pivot point that facilitates a secure pinch grip, allowing for high-speed vegetable sectioning or precision citrus supreming without hand strain. The blade features a taper-ground edge that has been hand-honed at a 15-degree angle. This geometry ensures minimal resistance when cutting through fibrous skins like tomatoes or dense proteins for charcuterie. Unlike stamped alternatives, the forged construction of the Genesis series adds significant structural integrity and a rigid spine (1.6mm), preventing the blade from flexing during tougher cuts. The tactile experience is defined by the Santoprene handle. This high-performance material remains tacky even when your hands are wet or coated in oil, providing a massive safety advantage in professional environments. The handle is injection-molded directly to the tang, eliminating gaps where bacteria can hide—a critical factor for NSF certification and hygiene compliance. Whether you are a culinary student mastering knife skills or a line cook managing a busy lunch service, this utility knife provides the reliable, predictable performance required for high-standard food preparation. It bypasses marketing fluff, delivering exactly what is needed: a hard-wearing edge, a secure grip, and perfect balance. Learn More$31.35 -
Messermeister Meridian Elite 6-inch Utility Knife
The Essential Middleweight for the Professional Kitchen In high-volume kitchens and serious home environments, the 6-inch utility knife is often the most used tool on the magnet bar. The Messermeister Meridian Elite 6-Inch Utility Knife (E/3688-6) is the definitive example of the Solingen tradition, designed to handle the high-repetition tasks that require more leverage than a paring knife but more finesse than a heavy chef's knife. Whether you are trimming silver skin from a tenderloin or segmenting citrus for a service, this knife provides the tactile feedback necessary for precision work. Forged Strength and the 15-Degree Elite Edge Unlike stamped alternatives, this blade is hot-drop hammer forged from a single billet of 1.4116 German high-carbon stainless steel. This traditional process increases the density of the steel, resulting in a Rockwell Hardness of 57-58 that balances edge retention with ease of honing. The 'Elite Edge' is hand-stropped to a razor-sharp 15 degrees per side, allowing it to glide through tomato skins and tough proteins without the resistance found in standard 20-degree factory edges. The Bolsterless Advantage One of the standout features of the Meridian Elite series is the bolsterless heel. By removing the thick metal transition between the handle and the blade, Messermeister allows you to use—and sharpen—the entire length of the edge. This design prevents the 'dead spot' at the heel common in traditional German knives, ensuring that your knife remains a precision instrument through years of professional maintenance and stone-sharpening.
