Kiritsuke

Kiritsuke knives are known as “masters knives” meaning that once you’ve attained a certain skill level all tasks can be completed with this knife shape. The blade of a Kiritsuke carries the same width from its heel to its dropped tip maintaining a slight camber throughout which is especially useful when breaking down whole fish.

  • Miyabi Artisan Kiritsuke 9.5-inch

The Professional Workhorse: Hand-Hammered SG2 Precision Historically reserved for the Executive Chef (the 'Master of the Kitchen'), the Kiritsuke is a hybrid tool that demands respect and delivers versatility. The Miyabi Artisan 9.5-inch (240mm) Kiritsuke (Model 34079-243) captures this tradition but upgrades it for the modern high-pressure kitchen. Unlike traditional single-beveled versions, this double-beveled masterpiece provides a symmetrical 50/50 grind, making it accessible for rapid push-cuts and precise pull-slicing alike. At the heart of this tool is SG2 (MC63) micro-carbide powder steel. In the world of metallurgy, hardness usually invites brittleness, but SG2 is the exception. This steel is both exceptionally hard—hitting a 63 Rockwell—and remarkably tough. It maintains a scalpel-like edge through 40 lbs of mirepoix without the micro-chipping common in lesser high-carbon alloys. The Artisan collection offers this premium SG2 steel at an extremely reasonable price point compared to custom boutique alternatives. Every blade undergoes Miyabi’s proprietary CRYODUR ice-hardening process, optimizing the molecular structure for durability and corrosion resistance. The Tsuchime finish is more than an aesthetic choice; the hand-hammered indentations create air pockets that prevent starchy potatoes and oily proteins from sticking to the blade during high-speed service. Finished with a 'Katana' edge as a tribute to Seki’s samurai heritage, this knife is the definitive tool for chefs who refuse to compromise between beauty and industrial-grade performance. Learn More

  • Shun Premier 8-inch Kiritsuke (TDM0771)

The Shun Premier 8-inch Kiritsuke is for cooks who favor a straight edge and push cuts over a rocking motion. In Japan, the kiritsuke is known as the master chef’s knife, and it handles many of the same tasks as a chef’s knife. Its long, straight edge meets the board along its full length, which makes it especially effective for slicing, julienne, dice, and brunoise. The same edge cleans and portions boneless proteins, fish in particular, and slices cooked meats neatly. The hand-hammered tsuchime finish on the Shun Premier blade helps food release as you cut, so slices fall away instead of clinging to the steel.
FeaturesStraight, extended edge: The flat profile makes full contact with the board on every push cut, which produces clean, uniform vegetable cuts.Angled tip: The kiritsuke’s signature tip is precise enough for fine scoring and detail work.VG-MAX cutting core: Shun’s proprietary steel resists wear and corrosion and holds a fine, keen edge through long prep sessions.Damascus cladding: Layered stainless steel supports and protects the core.Hammered tsuchime finish: The hand-hammered surface helps food release from the blade while cutting.Contoured walnut PakkaWood handle: The handle offers comfort and control and resists moisture.Handcrafted in Seki City, Japan: Each Shun knife requires at least 100 individual steps to complete in Seki City, one of Japan’s most important blade-making centers since the 13th century.Free lifetime sharpening: Shun offers free lifetime sharpening, so the edge can be professionally restored whenever it needs it.
