Slicing Knives

As their name suggests slicing knives are designed to be used when slicing meat. These long, thin blades typically range from 8 to 14 inches in length and are very similar to carving knives with exception to their rounded tips. The tip of a slicing knife has been rounded for the protection of anyone on the other side of a carving station who may be overly eager to reach in for an extra helping of roast beef

  • Glestain KE Series 9.4-inch (240mm) Left-Handed Sujihiki

Left-handed cooks who slice proteins need a slicer that pulls straight in the left hand. The 240mm Left-Handed Sujihiki is Glestain’s KE Series slicer ground as a mirror image of the right-handed 724TSK, with the dimples on the left face, so it tracks true through a long draw cut.It trims and portions fish, slices roasts and hams, and portions poultry breasts into even slices. The dimples reduce friction against the food, which gives cleaner slices of salmon and rare beef, and the bolster and end cap steady the knife through each stroke. An asymmetrical blade cannot be reground for the other hand, so the left-handed model is the only way to get this geometry working for a left-handed cook.

  • Miyabi Black 9.5-inch Sujihiki Slicing Knife

Long, Clean Slices in a Single Stroke The Miyabi Black 9.5-inch Sujihiki is a long, narrow slicer for cooks who portion and carve. Its length allows a full slice in one continuous draw, and the narrow blade presents less surface to the food, leaving clean faces on roasts, fish and terrines. It is the slicing knife for the Miyabi Black kitchen, used wherever a sawing motion would tear the cut.
Construction and Performance Ultra-hard core steel. A fine-grained powder steel holds a keen edge across many portions, keeping slices smooth from the first cut to the last. Ice-hardened blade. Sub-zero hardening stabilizes the steel for added hardness and corrosion resistance, an advantage when slicing acidic or brined foods. Flower Damascus cladding. Stainless layers protect the hard core along the full length of the blade. Honbazuke edge. The three-stage hand-honed edge severs fibers cleanly rather than compressing them, preserving the texture of raw fish and rare meat. D-shaped handle. The traditional Japanese profile keeps the blade aligned through long draws. Each handle’s grain and color are unique.
