The Shun Premier 6-inch Gokujo is a highly specialized and versatile tool designed for precision work with fish and meat. The name "Gokujo" translates to "supreme," reflecting the blade's unique hybrid design that functions as both a traditional boning knife and a flexible fillet knife. The blade features a stiff spine near the handle, providing the leverage needed to cut through cartilage and work cleanly around the bones of beef, pork, or poultry. As it tapers toward the tip, it becomes progressively more flexible, offering the delicate control required to glide between the skin and flesh of a fish, ensuring you get perfect fillets with minimal waste. At the heart of the Gokujo is a core of Shun's proprietary VG-MAX "super steel," renowned for its ability to take and maintain an incredibly sharp 16° edge while resisting corrosion and wear. This high-performance core is protected by 68 layers of Damascus cladding, which not only adds to the blade's strength and durability but also creates a unique, rippling pattern. The signature tsuchime (hand-hammered) finish on the upper part of the blade serves both an aesthetic and a functional purpose. The hammered indentations create small air pockets, which reduce drag and help the knife glide smoothly through food, preventing fat or delicate fish skin from sticking.
