Shun Classic Knives

Professional Tooling for the Rigors of Culinary Training This 8-piece VG-MAX steel kit provides the edge retention and specialized geometries required for high-volume prep and technical examinations. Transitioning from a hobbyist to a professional requires tools that can withstand 10-hour shifts and maintain a razor edge through 40 lbs of mirepoix. The Shun Classic 8-Piece Student Set (DMS0899) is engineered around Shun’s proprietary VG-MAX cutting core—a high-carbon, high-chromium formula enriched with tungsten and vanadium. This metallurgical composition achieves a Rockwell Hardness of 60/61, ensuring that your blades hold their 16° double-bevel edge significantly longer than standard European stainless steel. The kit is centered on the 8-inch Chef’s Knife, the workhorse of the kitchen, complemented by a 9-inch Slicer for precision protein work and a 6-inch Boning/Fillet knife for butchery tasks. Every blade features 34 layers of Damascus cladding on each side, which aids in food release and provides lateral stability. The D-shaped Ebony Pakkawood handles are moisture-resistant and ergonomically designed to reduce hand fatigue during repetitive chopping. Housed in a heavy-duty 8-slot knife bag, this set is built for the mobile chef who requires a complete, high-performance station that can be deployed instantly in any commercial environment.
