  • Shun Classic Chef Knife 10-inch (254mm)

Maximum Prep Velocity: The 10-Inch Workhorse for High-Volume Kitchens For the professional chef or the serious home cook handling large-scale production, the Shun Classic 10-inch (254mm) Chef's Knife is a significant upgrade in efficiency. While the 8-inch blade is a standard entry point, the 10-inch DM0707 model provides the additional surface area and leverage required to power through heavy cases of mirepoix, large proteins, and dense root vegetables without fatigue. At the core of this blade is Shun's proprietary VG-MAX stainless steel, a high-performance alloy that pushes the limits of edge retention and corrosion resistance. This core is supported by 68 total layers of Damascus cladding (34 per side), which not only creates a stunning aesthetic but adds essential structural integrity and facilitates food release. The blade is hand-sharpened to a precise 16-degree double-bevel edge, ensuring it glides through delicate herbs as easily as it breaks down a primal cut. The D-shaped Ebony Pakkawood handle is designed for ergonomic control, tucking firmly into the palm to prevent rolling during heavy use. For taller cooks or those accustomed to the long-stroke slicing motion of a professional line, this 10-inch variation offers a noticeable increase in speed. More food fits under the blade per cut, reducing total prep time and allowing you to maintain a consistent rhythm throughout long shifts. This isn't just a larger knife; it is a force multiplier for your culinary workflow. Learn More
  • Shun Classic 8-inch Western Chef's Knife

The Precision of Seki City Meets the Power of Western Geometry Stop compromising between Japanese edge retention and the comfortable rocking motion of a traditional German blade. The DM0766 delivers a taller profile and aggressive camber for high-volume prep. The Shun Classic 8-Inch Western Chef's Knife (DM0766) is a specialized tool designed to solve a specific problem for the modern cook. While traditional Japanese knives are optimized for vertical push-cuts, many professionals and home enthusiasts have spent years perfecting the 'rocking' technique common in Western culinary schools. The DM0766 bridges this gap by marrying Shun's legendary 61 Rockwell hardness VG-MAX steel with a redesigned, highly curved blade profile. This isn't just a standard chef's knife with a new name. Shun's engineers have increased the blade's height and camber (the curve of the belly), allowing the knife to rock smoothly through piles of herbs, garlic, and fibrous vegetables without the tip catching or digging into the board. This taller profile also serves a secondary purpose for the high-volume line: it creates massive knuckle clearance, reducing fatigue during a 10-hour shift, and provides a wide surface for scooping prepped ingredients directly from the board to the pan. Beneath the beautiful 68-layer Damascus cladding lies a core of proprietary VG-MAX steel. This high-carbon alloy includes additional tungsten for a finer edge and more chromium for superior corrosion resistance. For the chef who needs a razor-sharp 16-degree edge that won't require constant honing mid-service, this Western edition offers the perfect balance of Japanese metallurgical superiority and familiar European ergonomics. The Shun Classic 8-in. Hollow-Ground Chef's Knife is a true workhorse, designed for precision and effortless performance. This version of the Shun Classic Chef's Knife features hollow-ground indentations along the sides of the blade that create small air pockets. These pockets reduce friction when cutting and allow food to slide of the blade with ease.  This knife is also uniquely shaped. It is taller than your typical Japanese gyuto with a nice camber. It is a well balanced, beautiful knife with a traditional "D" style Japanese handle. • Shun Classic 6.5" (165mm) Nakiri Vegetable Knife

The Shun Classic 6.5 in. (165mm) Nakiri is the ultimate vegetable knife. The long, flat edge of the nakiri makes full contact with the cutting board in every cut, which improves your speed and greatly increases your efficiency in the kitchen. This is a great choice for anyone who like to tap chop. I especially like this knife shape for herbs, green onions, and mirepoix vegetables (celery, onions and carrots). You can use a nakiri to slice meat that has already been removed from the bone, but despite its similarity in appearance, this is not a cleaver. This knife really shines when preparing salad or stir-fry - you'll enjoy this blade tremendously, particularly when you have a lot of produce to process.  Shun's VG-MAX steel holds an edge extremely well, which can be especially important when you're chopping as this cutting motion dulls a blade more quickly than your typical rocking cuts. Honing is not necessary, but if you like to maintain your knife with a steel we recommend paring this knife with a ceramic rod.  Learn More
