Minonokuni Knives

Authentic Japanese blades (hochoes) hand-forged using traditional Japanese methods of old-world craftsmanship; Minonokuni knives are part of a project designed to preserve and protect the master/apprentice relationship. Even as demand for Japanese knives has grown; the skilled masters are aging, and it has been difficult to keep apprentices. While the methods of construction mastered over the centuries have changed very little, the methods of bringing the pieces to market is dramatically different. Then Knife Merchant was asked to assist by bringing knives from various masters in different types of material to market, so that the craftsmen can concentrate on their work and keep the apprentice fully employed, without the burden of stopping production to make sales. Minonokuni is the name of a prefecture (state) that existed in the days of the Samurai. It encompassed a wide area including Seki-City and Sakai, which are the areas of Japan in which our craftsmen are making these blades. This is why we have chosen this as a brand name to represent these knives. You will find the quality to be far superior to comparable material types. When the knife maker has his name on the blade (instead of working for a company), there is greater pride and care taken in little details that make a great difference in final quality. Minonokuni knives are now available in a variety of grades to suit every need and price point.

  • Minonokuni Ume 165mm Left Handed Deba

    The Minonokuni Ume 165mm Left Handed Deba is primarily used to break down whole fish and poultry. This is a thick, heavy blade designed to efficiently cleave fillets from the bone. The choice between 165 and 180mm sizes really comes down to comfort in controlling the knife and size of fish to be cut. The steel type used in this blade SK5 also known as Yellow Paper. This is the softest and most forgiving of the steels used in traditional hand-forged Japanese knives which means that this knife will need to be sharpened more frequently than the white or blue steel alternatives, but that it is also less likely to chip. We recommend SK5 steel for use on deba knives which are by nature used to cut directly against, along and between bones and are therefore subject to more abuse than most knife shapes.

    The Minonokuni Ume 195mm Deba is a traditionally crafted Japanese knife designed for precision and durability. Part of the Ume (Plum) series, these knives are produced by individual craftsmen as part of the Minonokuni project, ensuring a level of quality that exceeds production knives at this price point. This Deba knife features a 195mm (7.67 inches) blade made from SK-4 carbon steel, with a Rockwell Hardness of 58-60.  Also called yellow paper steel, this carbon alloy is softer than white or blue carbon steels, so it can be sharpened more easily and is less likely to chip when making direct contact with bone or hard boards. This steel type is an excellent choice for anyone who prefers a tough blade and is comfortable sharpening their knife more often. This is an excellent choice for chefs who are beginning to work with traditional Japanese knife shapes. The quality of the grind-work is a crucial aspect to consider when purchasing traditional Japanese knives.
