Global Classic Knives

Crafted in Japan since 1983, Global Classic knives are known for their distinctive single-piece stainless steel construction. The blades are made from CROMOVA 18, a high-carbon stainless steel containing chromium, molybdenum, and vanadium, which provides good stain resistance and edge retention. Instead of a traditional tang, the hollow stainless steel handle is filled with sand to achieve an ideal weight and balance. This seamless design offers hygienic benefits, as there are no gaps where food can be trapped.

The blade edge on Global knives is ground to an acute angle, resulting in a notably sharp edge that lasts. The handles feature a signature dimpled pattern for a secure, slip-resistant grip. Favored by both professional chefs and home cooks, these lightweight knives are designed for balance and precision in a variety of kitchen tasks.

  • Global Ikasu 5-Piece Knife Block Set

Surgical Precision Meets Modern Minimalist Design The Global Ikasu V 5-Piece Set is not just a collection of kitchen tools; it is a specialized system designed for chefs who prioritize speed, hygiene, and razor-sharp agility. Forged in Niigata, Japan, these knives are iconic for their seamless all-stainless steel construction. Unlike traditional western knives with heavy bolsters and porous wooden handles, the Global Ikasu series utilizes a hollow-handle design filled with the exact amount of sand required to create a perfect weight-to-blade balance. At the heart of this set is the G-2 8" Chef's Knife, a multi-purpose workhorse that excels in high-volume vegetable dicing and protein breakdown. The set is rounded out by the G-9 Bread Knife, featuring specialized serrations that bite into hard crusts without tearing the soft interior, and the GS-5 Vegetable Knife, which provides a flatter profile for clean, rhythmic chopping. The GSF-22 Utility Knife handles the intricate detail work that larger blades miss. Because these knives lack a bolster, you can sharpen the entire length of the blade from heel to tip, ensuring you never deal with the 'dead zone' found in German-style cutlery. The Cromova 18 steel is specifically tempered to a Rockwell hardness of 56-58, providing a 'sweet spot' for edge retention—it stays sharp through long shifts but remains easy to hone and sharpen back to a factory edge using a ceramic rod or waterstone.
