Norton 1000/8000 Grit Combination Waterstone
The Norton 1000/8000 Grit Combination Waterstone creates an abrasive slurry during use, for effective sharpening, and less pressure than oil stones. The 1000 grit is fairly course and should be used to fix minor chips and dings in the blade. The 8000 is used for a high degree of polish on a knife. Generally, stones in this range are used on traditional Japanese knives to smooth grind marks along the shinogi line and minimize drag. For general use like cutting tomatoes, this may be too high a degree of sharpening. When slicing meats and fishes you benefit from this mirror finish sharpening. RH Preyda 1000/6000 Combination Grit Arkansas Stone
Precision Engineering Meets Natural Performance: The Ultimate 1000/6000 Dual-Grit Arkansas Stone For the professional chef or the serious tool enthusiast, a knife is only as good as its edge. The RH Preyda 1000/6000 Grit Combination Arkansas Stone represents the pinnacle of natural sharpening technology. Unlike mass-produced synthetic stones that wear down quickly and require frequent flattening, this stone is crafted from natural Novaculite—a rare, silica-rich rock found only in the Ouachita Mountains of Arkansas. This unique mineral composition provides a dual-benefit that synthetic stones cannot match: extreme abrasiveness for rapid metal removal and incredible hardness for long-term stone flat-retention. The result is a 'quicker dull-to-sharp' process that saves you time and ensures your high-carbon or stainless steel blades receive a consistent, razor-sharp edge every time. The Versatility of Two Stones in One This 8" x 3" powerhouse features two distinct grits bonded into a single, convenient block. The 1000 Grit Surface: Designed for the initial sharpening phase. This side is aggressive enough to reset a dull edge, remove micro-chips, and establish the primary bevel without removing excessive material. The 6000 Grit Surface: Once the edge is established, flip the stone to the ultra-fine 6000 grit side. This surface hones the metal to a mirror-like polish, refining the edge for surgical precision in slicing, dicing, and detail work. Built for stability, the stone includes a non-slip silicone base, ensuring your sharpening strokes remain steady and safe, whether you are working in a fast-paced professional kitchen or a home workshop. Norton 1000/4000 grit Combination Waterstone
These stones vary from the Japanese in two key areas.
The grit size is just a bit coarser. (There is no International Standard for grit sizes)
The bonding agent is softer than a premium Japanese stone. I don't know that they actually wear faster though, because they produce results much more quickly. I really like the finish produced by the 4000 grit and we use it regularly.
We actually like these stones quite a bit. Nice size, sturdy plastic box that also serves as a stand for the stone. Be very careful to not push the edge into the stone. Draw the knife towards you with the edge facing away. Please call or email with any questions.

Minonokuni 1000 grit Waterstone
The everyday stone for keeping your edge sharp: Minonokuni's 1000 grit waterstone is the best grit for routine maintenance and for restoring an edge on a knife that has gone dull. In a typical Japanese sharpening setup, stones are generally grouped into three levels of abrasion: a coarse stone for repairing chips or reshaping a badly worn edge, a medium stone for everyday maintenance and re-establishing a working edge, and a finishing stone for polish and refinement. This 1000 grit stone sits at that middle stage, and for most home and professional cooks it is the only stone needed on a regular basis. It is coarse enough to bring back a genuinely dull blade, yet fine enough tho create an edge that is functionally sharp. As a traditional waterstone, it needs to be soaked in water before use, typically until the stream of bubbles rising from the stone stops, usually a few minutes. Once soaked, keep the surface wet with water throughout sharpening, and let it air dry fully after use before storing it. Made in Japan and sized at 210mm by 70mm by 20mm (8.25 by 2.75 by 0.8 inches), this stone pairs naturally with a coarser stone for edge repair or a finer stone, such as Minonokuni's own 4000 grit, for a higher polish. Masahiro 1000 Grit Medium Waterstone with Stand
The Hard, Durable Core of Professional Sharpening In the world of professional cutlery, finding a balance between hardness and durability is often an exercise in compromise. Masahiro defies this convention. This 1000 grit medium waterstone is specifically designed to service steels that represent an exceptional anomaly—blades that are incredibly hard and wear-resistant, yet maintain a durability that prevents brittleness. The MH40103 is the essential bridge between coarse repair and fine polishing, providing the tactile feedback required to set a perfect primary bevel. Unlike standard synthetic stones that can feel 'mushy' or wear down unevenly, this Masahiro traditional waterstone maintains its flatness longer while providing a consistent slurry. It is the workhorse stone for the high-volume kitchen. Whether you are maintaining a line of Masahiro's own proprietary steel or any high-end Japanese carbon blade, this stone handles the density of the metal without glazing over. The generous 2-7/8 inch width provides a massive landing zone for larger chef's knives and cleavers, ensuring stable, full-blade strokes that result in a uniform edge from heel to tip. Where most stones require external holders that can slip on wet stainless tables, the Masahiro Medium 1000 comes equipped with a heavy-duty, integrated stand. This isn't just a convenience; it is a safety and precision feature. By raising the stone off the work surface and providing a non-slip base, it allows for a more ergonomic sharpening angle and prevents the 'knuckle-knock' common with low-profile stones. This is the definitive tool for the chef who demands an edge that holds up through 40 pounds of prep without the fear of chipping. Learn More$58.25 -
Naniwa 1000 grit Traditional Waterstone
Naniwa’s Traditional Water Stones are specially designed for sharpening hard steels commonly found in woodworking tools and select specialty knives. This Hard Steel series runs parallel to Naniwa’s Standard Traditional Stones but is engineered for enhanced performance on tough steels. Featuring a harder binder, these stones provide a more aggressive sharpening action while minimizing wear, making them ideal for the unique demands of hard steel applications. 1000 Grit: This stone is a very popular grit choice because it starts to refine the edge.
