Dexter-Russell 5.5-inch Flat Handle Boning Hook

A longer hook reaches deeper into a large cut, which helps when pulling a beef chuck or a pork shoulder apart along its seams. Dexter-Russell’s T326 hook has a 5.5-inch stainless steel hook on a flat plastic handle, sized for heavier boning work than the 3.375-inch T324. Hold the meat with the hook in the off hand and work the seam with a knife such as the Sani-Safe 6-inch Wide Boning Knife. The hook keeps that hand a safe distance from the blade and the cutting surface, which reduces the risk of accidental cuts.
