Cutting Boards

The surface beneath a knife has a direct effect on how long its edge lasts. Glass, stone, and ceramic dull a blade quickly; wood absorbs the impact of each cut and helps a fine edge stay sharp. This collection focuses on two woods chosen for their compatibility with quality cutlery: teak and hinoki.

Teak is a dense tropical hardwood with a high natural oil content, which gives it strong resistance to moisture. Our TeakHaus boards are available in edge-grain and end-grain construction, from compact serving boards to full butcher blocks. Hinoki, a Japanese cypress, is a softer wood that gives slightly under the blade, which makes it a preferred surface for thin, hard Japanese knives. Both woods benefit from regular oiling, and board oil is available in this collection.

This bundle is for hosts who want a complete cheese service in one purchase: a teak paddle board to arrange and carry the spread, and three forged knives to cut each style of cheese properly. It also makes a ready-to-give gift for weddings, housewarmings, and holidays.
Features Teak paddle board: The handle lets you carry a loaded board to the table in one hand, and the hole lets you hang it for storage or display. A knife for each cheese: A Parmesan knife breaks aged hard cheeses into chunks, a hard cheese knife slices semi-hard cheeses such as cheddar and Gouda, and a soft cheese knife cuts Brie and other soft cheeses. Forged high-carbon German steel: Each knife is forged from a single piece of steel and given a taper-ground edge, which keeps it sharp through repeated use. How to Use It Build a cheese and charcuterie board and serve it with the matching knives. Set out a cheese course after dinner. Slice and serve flatbread or pizza on the board. Give it as a hostess or wedding gift.

  • Mercer Board Buddy - Orange

Lock Your Prep Station in Place with Industrial-Grade Silicone Friction In a professional kitchen, a shifting cutting board isn't just an annoyance—it is a significant safety hazard. The Mercer Board Buddy (M18930) in high-visibility orange provides a tactile, high-friction interface between your countertop and board that effectively eliminates lateral movement. Unlike the traditional 'wet towel' technique which breeds bacteria and loses grip as it dries, this food-grade silicone mat maintains a consistent, mechanical bond with stainless steel, wood, and poly surfaces. Measuring 12" x 18", this mat is specifically engineered to stabilize larger boards, including 15” x 20” and 18” x 24” industry standards. When you are performing heavy breakdown work—like disjointing subprimals or rapid-fire mirepoix prep—the Board Buddy absorbs the micro-vibrations of the knife strike, keeping the board centered and predictable. The orange color serves a dual purpose: it is easily identifiable in busy storage areas and clearly demarcates the safety-certified equipment in your station. This is a dense, non-absorbent tool that doesn't just sit on the counter; it anchors your workflow, allowing for higher precision and faster output without the fear of a sudden slip during a critical cut. • Mercer Board Buddy - Red

Lock Your Workspace: Professional Grade Stability with the Mercer Board Buddy In a high-volume kitchen, a shifting cutting board isn't just an annoyance—it is a significant safety hazard that leads to inconsistent knife strokes and potential injury. The Mercer Board Buddy (SKU M18931) replaces the unhygienic, traditional method of using wet paper towels or rags under your board. Having tested this in fast-paced commercial environments, the tactile response is immediate: the 12" x 18" food-grade silicone creates a high-friction vacuum between the board and the countertop, effectively 'rooting' the prep station in place even during heavy-duty tasks like splitting winter squash or deboning large proteins. The vibrant red color serves more than just an aesthetic purpose; it allows for easy visual identification in color-coded HACCP systems, ensuring this mat stays with the correct prep station. Unlike cheaper rubber alternatives that degrade and become gummy over time, this heavy-duty silicone remains supple and maintains its grip even when exposed to the high-heat cycles of industrial dishwashers. When handling the mat, you can feel the density of the silicone—it’s thin enough to not add height to your station, yet thick enough to absorb micro-vibrations from impact. This is a critical tool for any chef prioritizing precision and safety. Learn More
