Ateco Piping Tip Covers, 4 Pack
Icing left in an uncovered tube crusts over within minutes, and the first squeeze after a break pushes out a dried plug. These covers fit over the tube and attach to the nut of a standard coupler, sealing the tip. They are useful when filled bags go into the refrigerator, travel to an event or wait on the bench while other work is done. The cover also stops the bag from leaking onto the counter. They attach to a standard coupler such as the Ateco 400 or 405. Learn More -
Ateco Standard Plastic Coupler
A coupler lets one bag of icing pipe through several tubes. The base sits inside the bag, the tube goes over it on the outside, and the ring locks it in place, so changing from a star to a leaf tube means unscrewing the ring and swapping the tube. The 400 is Ateco’s standard coupler, sized for the small decorating tubes used for writing, flowers and leaves. Ridges on the ring give a good grip with icing on your fingers. For larger pastry tubes, use the Ateco 402 or Ateco 404. A metal version is also available. Learn More -
Ateco Medium Plastic Coupler Set, 3 Pieces
Pastry tubes in Ateco’s 800 series are larger than decorating tubes and need their own coupler. The 402 includes one base and two rings, which together cover the small and middle sizes of the plain, star and French star series. The 7/8-inch ring holds tubes with 3/16- to 5/16-inch openings, along with the 231 Bismark tube. The 1-inch ring holds 3/8- to 1/2-inch tubes. Swapping rings takes seconds, so one bag can move from a fine star border to macaron shells. The largest tubes, 9/16 inch and up, need the Ateco 404. For all sizes on one base, see the Ateco 407. Learn More -
Ateco Large Plastic Coupler
The biggest tubes in Ateco’s 800 series sit on a wider base than the standard and medium couplers can hold. The 404 is sized for them, holding tubes with 9/16- to 11/16-inch openings. That includes plain tubes such as the 807 and 809 and open stars such as the 827 and 829, the sizes used for choux, cupcakes and meringue. The coupler lets you move between them without emptying a large bag of batter.Cake icers and Sultan tubes are too large for any coupler. For one base that covers small through large tubes, see the Ateco 407. Learn More -
Ateco Standard Metal Coupler
For kitchens that change tips many times a day, the 405 offers Ateco’s standard coupler in nickel-plated brass instead of plastic. It holds the same small decorating tubes as the plastic standard coupler. Ateco notes that the metal nut also fits its plastic coupler bases, so a worn plastic ring can be replaced with a brass one.The plastic equivalent is the Ateco 400. Learn More -
Ateco Plastic Coupler Set for Small to Large Tips
Rather than keeping a separate coupler for each tube size, the 407 uses a single base with four interchangeable rings. Between them, the rings hold tubes with bases from 1/2 inch to 1.5 inches, which covers everything from small decorating tubes to Ateco’s large 800-series pastry tubes.A cap is included for sealing a filled bag between uses. Only extra-large tubes, such as cake icers and the Sultan tubes, fall outside its range. For a single size range, the Ateco 400, 402 and 404 are simpler. Learn More -
Ateco Sculpting Tool Set, 9 Pieces
Fondant and gum paste figures take their detail from modeling tools. This set has nine double-ended tools, 18 shapes in all, including ball tools for thinning petal edges, veiners for leaves and blades for cutting and marking. The round ball pushes out the edge of rolled fondant for a clean scalloped edge, and the cone catches the edge for a ruffled effect. They are plastic, which will not mark or discolor sugar paste. Lightly dust the tools with cornstarch if the paste begins to stick. For working with isomalt and other sticky materials, see the non-stick Ateco 4205 set. Learn More$12.80 -
Ateco Non-Stick Sculpting Tool Set, 3 Pieces
Isomalt and pulled sugar cling to most tools. This set is made from non-stick TPR plastic, which Ateco designed for isomalt and other sticky foods, so warm sugar can be shaped without tearing. The three tools are double-ended, giving six shapes for smoothing, marking and forming. For a wider range of shapes for fondant and gum paste, see the Ateco 4200 9-Piece Set. Ateco 15-inch Parchment Triangles, 100 Count
Pastry chefs roll parchment triangles into small cones, called cornets, for the finest piping work. Writing on a cake, piping chocolate filigree and drawing thin lines of royal icing all call for a tiny opening that a plastic bag and tube cannot match. These 15-inch triangles roll into 7-inch cones, a size that fits easily in the hand for detail work. The paper is stiff enough to hold its shape, and the tip can be snipped to any size. For a larger cone that holds more, see the 18-inch parchment triangles. Learn More$10.95 -
Ateco 18-inch Parchment Triangles, 100 Count
When a parchment cone needs to hold more than a spoonful, the 18-inch triangle is the better size. It rolls into a 9-inch cone with room for enough melted chocolate or icing to decorate a full tray of cookies or petits fours. The parchment accepts small tubes without a coupler, or it can be used with just a snipped tip. Throw it away when finished, which avoids washing chocolate out of a reusable bag. Parchment cones are especially useful with chocolate, since the warmth of your hand helps keep it molten as you pipe. For fine writing, the smaller 7-inch cone from the 15-inch parchment triangles is easier to control.
